You can try checking with a visa agent to do the extension.
When you exit the country, that visa is cancelled. So I don't think you would have a problem doing the one day visa run.

Here's my situation:
I am a Swedish citizen, my wife is Spanish.
We are currently on a 60 day tourist visa in Bali, but would like to stay for yet another 30 days once the 60 day period has finished (total consecutive 90 days).
Here's the thing: according to the officer in the passport control at Denpasar airport, the 60 day tourist visa is NON-EXTENDABLE (we obtained our visas in Bangkok by the way).
However, I am reading in this forum someone posting that indeed it IS extendable - and if there is an option to catching a flight to Singapore and back, I would obviously prefer that a million times.
IF - IF - we indeed do need to get out of the country to get a fresh VOA stamp, we would have to leave no later than the 60th day of our visa (=last day to legally stay in the country), and my question would then be: since we dont want loose time, we where thinking about doing Bali-Singapore-Bali on the very same day, returning to Denpasar in the evening - is it possible to get a fresh 30 day VOA whilst still being on the 60th day of the original visa (that in this case is theoretically still valid, even though only for that day)?

There is no official entension to a 60 day tourist visa. Leave for Singapore or Kuala Lumpor and come back in on a tourist visa on arrival or obtain a new 60 day visa.
No matter what you are told that is the law. You may get someone to break the law but thats another story.
