Default Restaurant suggestions for chef visiting Bali

A friend has asked me what places I recommend in Bali to eat at for a chef visiting Bali.

I am thinking of Ibu Oka, Mak Beng in Sanur, Mozaic in Ubud, seafood restaurants in Jimbaran.

    What would you suggest?
Give a man a fish and he will eat for a day. Teach a man to fish and he will sit in a boat drinking beer all day.

It just depends what this Chef wants to sample. If it's Balinese food, your choices, Ibu Oka and Mak Beng are good, although at Ibu Oka, Ubud, you only eat babi guling. I would add Bumbu Bali, Tanjung Benoa, for very fancy and good Balinese cuisine.

For better cuisine, Mozaic, as you suggested, is a must, Lamak, Ku de TA, the Living Room, Kafe Warisan.

Forget about the sea food restaurants in Jimbaran, they are all a mess: poor quality food, poor cuisine, and dirty.
    Keep on smiling.

    Indus? Casa Luna?

Is this chef looking for places to amuse his/her palate, possible pointers on local trends in food prep, decor, &c? The response depends on the specifics I imagine.
    I feel...unusual

you would have to give Kayuputi at St Regis a go. excellent restaurant with great service. yes, its expensive, but you get what you pay for.

any of the nasi padang places are good, and i really like Saribundo in Sanur.

Hu'u (Nutmegs, really) is excellent, and Chef Phillip is one talented man!
